TASTING CHARACTERISTICS

Crystal, bright sub-yellow – straw.

Elegant nose, crisp, clean, and precise. With great purity and freshness with textural depth. Zesty, mineral, floral and spicy, with lime and grapefruit, white peach, and blossoms. Flint, ginger, and wild herbs.

Clean palate, mouthwatering, precise, and persistent. Excellent structure and concentration with a fresh feel and great balance. Fine boned, cool, dry, and stony. Fresh, but with enough depth of fruit. With a clean lemony finish and a touch of spice.

Impressive length and purity.


 

VARIETAL COMPOSITION: Assyrtiko 90% - Sauvignon Blanc 10%.

VINTAGE: 2020

REGION: Amyndeon plateau. Amyndeon viticulture zone.

VINEYARD: 30ha single block vineyard situated at an altitude of 625m.

SOIL: Sandy, sandy-clay over limestone with excellent drainage.

CLIMATE: Semi continental climate, with cold winters, with substantial rain and snowfalls, and cool, relatively dry summers.

VINEGROWING METHOD: Sustainable viticulture with zero use of herbicides. Double cordon, grafted rootstock. Application of Regulated Deficit Irrigation (R.D.I.). Application of Precision Viticulture.

HARVEST: Manual harvest in small picking baskets with a maximum of 15 kilos.

YIELD: 61 HL/ha, post to green harvest & selection.

DENSITY OF PLANTATION: 5.800 shoots/ha.

VINIFICATION METHOD: Destemming and light crushing. Skin contact for 3 hours, controlled alcoholic fermentation in stainless steel tanks with cooling jackets, maintenance of wine “sur lies” for 3 months with regular stirring.

DEGREE DAYS: 1.683,10 April – September.

TOTAL PRECIPITATION: 380,92mm. April – September.

ANALYTICAL DATA: Alcohol: 12.93% vol., Titratable Acidity: Titratable Acidity: 5.82 g/l., Residual Sugar: 1,90 g/l., pH: 3,44.

CERTIFICATIONS: Vegan Certified.
