TASTING CHARACTERISTICS
Bright, straw, pale lemon with green hints. Fresh and intense bouquet, fruity (grapefruit, lime, passion fruit, lychee, pear), herbal (grass), and mineral hints (flint, wet gravel). Dry, crisp, fresh, and rich on the mouth. Citrus (grapefruit, lime) and herbal character (thyme). Long aftertaste with crisp and fresh acidity.
VARIETAL COMPOSITION: Assyrtiko 90% - Sauvignon Blanc 10%.

SINGLE VINEYARD LOCATION & DATA: ‘’Aspri Petra’’ (= White Stone) sub-region. 625m. altitude, with southeast exposure. 2,5ha. Location 40º42’02.06Ν 21º38’19.97Ε.
REGION: Amyndeon plateau. Amyndeon viticulture zone.
VINEYARD: 5ha privately owned single block vineyard + 25ha contracted single block vineyard situated at an altitude of 625m.
SOIL: Sandy, sandy-clay over limestone with excellent drainage.
CLIMATE: Semi continental climate, with cold winters, with substantial rain and snowfalls, and cool, relatively dry summers.
VINEGROWING METHOD: Sustainable viticulture with zero use of herbicides. Double cordon, grafted rootstock. Application of Regulated Deficit Irrigation (R.D.I.). Application of Precision Viticulture.
HARVEST: Manual harvest in small picking baskets with a maximum of 15 kilos.
YIELD: 61 HL/ha, post to green harvest & selection.
DENSITY OF PLANTATION: 5.800 shoots/ha.
VINIFICATION METHOD: Destemming and light crushing. Skin contact for 3 hours, controlled alcoholic fermentation in stainless steel tanks with cooling jackets, maintenance of wine “sur lies” for 3 months with regular stirring.
DEGREE DAYS: 1.683,10 April – September.
TOTAL PRECIPITATION: 380,92mm. April – September.
ANALYTICAL DATA: Alcohol: 12.93% vol., Titratable Acidity: 5.80 g/l., Residual Sugar: 1,90 g/l., pH: 3,44.
